Asparagus Soup
saute 1 chopped yellow onion and 3 chopped cloves of garlic with 3T butter until soft, add 2.5 # chopped asparagus, 1t salt, 1/2t pepper, 6 c chicken stock, bring to a boil, cover and simmer 30 mins.
Using an immersion blender, blend the soup until smooth. Stir in 2T lemon juice, 1/2 c grated parmesan cheese, simmer 5 more minutes.
