That sentence goes in present simple because what you are trying to say is “My plans for tomorrow are to see fireworks.” If you said “iré” rather than “son” your sentence would sound something like “My plans for tomorrow I will go see fireworks”.-
Ok. How would I need to change it to be able to use the future simple?

You can just say: “Mañana iré a ver fuegos artificiales” = “I will go see fireworks” or “Mañana veré fuegos artificiales” = “Tomorrow I will see fireworks”.
